About Our Chefs

Chef Kelsy Westwater, a culinary degree holder from the Art Institute of Colorado, has worked in some of the most renowned kitchens in the country. She gained her formal training in 2008 and has since worked as a stagier at the prestigious Flagstaff House above Boulder, Colorado. After earning her degree, she moved back to her hometown of Birmingham, Michigan, where she served as the Head Chef of Peabody's Restaurant. Kelsy's passion for cooking shines through in her trademark "fancy comfort" food, which she has been serving to the lucky citizens of SW Colorado since she moved to Durango in 2015.

Chef Peter Westwater, born and raised in Durango, has spent nearly 20 years in the restaurant industry. He has honed his craft in some of the most respected kitchens in the area, including the Cypress Cafe and The Container at Ska Brewing. Peter enjoys the creative aspects of being in the kitchen and providing people with quality, delicious food. When he's not in the kitchen, he can be found exploring the mountains, the desert, or on the river with his wonderful wife and their dogs.

Our Dining Options

At Mill Street Bistro, we are open Wednesday through Saturday from 4:30 pm to 8 pm for dine-in and take-out orders. Walk-ins or reservations are welcome, so whether you're looking for a quiet dinner for two or a family dinner, we've got you covered.
