Elizabeth Copeland, a school teacher and music instructor from Delaware, was informed by her husband, Richard, that he had purchased a sandwich shop in Salt Lake City, Utah, with the express purpose of giving her the chance to explore her true passion: being a restaurateur. This bold move marked the beginning of a journey that would span almost three decades, during which time the Copelands would build a reputation for delivering not only exquisite food but also exceptional service.
