Our History

Pablo's Mexican Restaurant was founded by Pablo and his mother, Ann, who wanted to share their San Diego family recipes with the people of Shakopee. For over three decades, our family has been dedicated to providing high-quality, fresh Mexican food that not only honors our Hispanic roots but also stands out as a unique dining experience in the region. Today, Pablo's is in its second generation of ownership, with brothers Ron, Nicole, Ed, and Katie at the helm, along with their children and a dedicated team of staff who have been with us for many years.
