Our Story
We're a team of passionate foodies who have been friends since our youth. Our founders, Justin Oliveri and Josh Lorenzen, have spent years honing their skills in the culinary world. They've worked in some of the best restaurants in the region, earning accolades and building a reputation for their dedication to quality and creativity. When they decided to open their own restaurant, they drew inspiration from the natural beauty of the Pacific Northwest and their own plant-based diets. They named their restaurant RUT after the Latin word "radix, " meaning root, to reflect their commitment to sustainability and nourishing their community.
