Originally planning to open a graphic design business in Grass Valley, Gerard instead found himself opening a restaurant - The Bohemian Cafe in Occidental. This popular and beloved restaurant quickly became known for its amazing atmosphere and, of course, its incredible food. Gerard's talents were rewarded many times over, but it was his introduction to Spanish Paella while skiing in Spain that truly changed the course of his career.

Once Gerard mastered the art of cooking this dish to perfection, he founded Gerard's Paella and took his passion on the road. Today, he is always happy to introduce others to Spain's most famous dish. His talents have been recognized by many, including Bobby Flay, who challenged Gerard to a paella Throwdown on the Food Network Show, Throwdown with Bobby Flay.
