Welcome to Darbster, a unique plant-based bistro that offers a creative menu designed to appeal to both vegetarians and mainstream diners. Our goal is to provide delicious, natural, organic, and vegetarian-friendly cuisine that will satisfy all tastes. With our waterside deck, Darbster offers a welcome respite from the fast-paced world outside, providing superior and knowledgeable service in a casual atmosphere for our locals and visitors alike. As vegetarians ourselves, we established Darbster to offer a first-rate vegetarian meal combined with excellent service and an ample selection of beers and wines.
Darbster is named in honor of Darby, our 17-year-old poodle who came to us about ten years ago from a puppy mill in the mid-west. We are proud to offer a loyalty program that rewards our loyal customers.
Our Menu
Our menu includes our version of some old-time classics as well as some new innovative dishes. Our starters feature the Raw Summer Salad, a delightful mix of spring mix, strawberries, blueberries, pistachios, cucumbers, with strawberry balsamic dressing. The Eggplant Fries, made with parmesan-crusted eggplant, Pomodoro sauce, and cashew parm cheeze, are a customer favorite. We offer a selection of soups, including the Raw Pistachio and Thai Broccoli. Our entrees feature the Penne Primavera, made with penne pasta, pistachio basil and mint pesto, broccoli, zucchini, and tomato. Our desserts include the RAW Chia Pudding with Blueberries.
Darbster also offers specials, including Happy Hour on Wednesday - Saturday from 5 pm - 7 pm and Sundays from 5 pm - 7 pm, where you can enjoy 20% off your entree if you bring your four-legged friend.

We are closed on Mondays and Tuesdays, open from 5 pm - 9 pm on Wednesdays and Thursdays, from 5 pm - 10 pm on Fridays and Saturdays, and from 10:30 am - 3 pm (Brunch) and 5 pm - 9 pm (Dinner) on Sundays.
Foundation
Darbster Bistro is not just a dining experience; it is also a profound commitment to animal welfare through the Darbster Foundation, also known as Darbster Rescue. Since its inception alongside Darbster Bistro in 2009, the Darbster Foundation, a 501(c)(3) non-profit organization, has sought innovative ways to carry out its mission to reduce the euthanasia rates of animals in the Southern United States. With every delicious animal-saving meal enjoyed at Darbster Bistro, a portion of profits are directed towards critical animal welfare efforts. From 2009 to 2015, these efforts included the sponsorship of over 3,000 spay/neuter surgeries and the provision of medical care for community animals. In 2015, we began expanding our impact on the oversupply of homeless animals by transporting cats and dogs from South Florida to our own adoption centers in New Hampshire, Darbster Kitty and Darbster Doggy, as part of our transport program.
