For over four decades, Pauline's has been a staple in local cuisine, having been recognized as one of Burlington's highest-rated restaurants. A hidden gem tucked away off Shelburne Rd., the restaurant emphasizes using fresh, local, and in-season ingredients in its upscale-yet-unpretentious dining. First transformed into a cafe, the first floor dining area featured rich cherry paneling, custom oak tables, original wood framing, and an intimate cherry bar. An addition was built in 1996, now called the "porch." The upstairs dining rooms feature warm hues of gold, green, sienna, and mauve, with an eclectic artwork collection. Candle-lit tables, hand-picked selections of jazz, and an extensive wine cellar contribute to the romantic and relaxed environment. Two separate rooms are upstairs, known as the "Gold" and "Plum" Rooms, which are popular for business gatherings and private functions.
